Vegetable Purée Soup - A Tasty Way to Give Kids Vegetables

Every year, with the onset of cool weather, there's increased interest in making soups from scratch. A large pot of soup simmering on the stove always fills a house with delicious, homey smells, and a bowl of steaming hot, nutritious soup is especially satisfying on a cold fall or winter's night.

One of my favorite soups is this Moroccan Vegetable Purée Soup recipe. It's easy – chopped vegetables are simmered in vegetable or chicken stock before being pureed – and very nutritious, since you're starting with fresh vegetables and using the broth which retains the vitamins and minerals.

Although Vegetable Purée Soup is elegant enough to serve company, it's also a tasty family recipe which may help entice your kids to eat vegetables. That's because it's easy to adjust the recipe for even finicky eaters. Just increase the quantities of vegetables that your family likes and reduce or eliminate the ones they don't.

Better yet, get the kids in the kitchen to help out. Studies show that kids are more likely to eat what they help prepare.

This pureed soup recipe was AMAZING! I inserted a butternut squash for the pumpkin and jicama for the 2nd type of potato in the recipe. I only cooked my items for 20 minutes. I also blended in quartered almonds without the skin for protein. Thanks for your post.
