Stretch the Food Budget with Tagines

Moroccan meat and vegetable tagines have always been family favorites, but great taste isn't the only thing going for them. As with other kinds of stews, meat and chicken often take back seat to vegetables in these dishes, making them ideal choices when trying to stretch a food budget.

The Tagine of Chicken with Peas and Potatoes shown here is just one example. Half a chicken, a pound of peas and four potatoes can generously feed a family of four, especially when served Moroccan-style with bread for scooping everything up.

Meat tends to be used more sparingly than chicken in similar tagines, but no one notices. The vegetables are the stars of these meat and vegetable dishes, and even kids find the veggies tasty since they absorb so much flavor from the spices and sauce. Try one of the following meat and vegetable tagines, and see how delicious an economical a Moroccan family meal can be.
