Two months back I posted a recipe for broken vermicelli with a meat and tomato sauce. The dish pictured here, however, is a vegetarian version which can be pulled together rather quickly with ingredients found in most Moroccan kitchens. Onions, tomatoes, butter and saffron meld together to make the savory sauce, which gets stirred into fine strands of pasta after they're cooked in broth.
