It's not too early to think of ways to minimize your kitchen work in Ramadan, which is barely a month away. Many Moroccans I know like to make batches of pastries, appetizers and other freezer-friendly food well in advance, which help keep iftar preparations a snap. These easy but tasty Veggie and Kefta Briouats are one such item. Assemble them days or weeks ahead of time, freeze and then fry shortly before serving.
