Here's another variety of briouats that has made it onto my iftar table this Ramadan - the easy-to-prepare Tuna and Potato Briouats. The simple combination of flavors and ingredients is sure to be a hit with your family, and I like the fact that these briouats can be put together quickly and with little fuss. Unlike looser fillings which can try to escape while you're folding the dough, the mashed potato filling packs easily and stays put, allowing for easy folding whether you're in a hurry or are inexperienced with folding egg rolls or other stuffed pastries.
