If you enjoy the texture and taste of semolina, these easy-to-make Semolina Ghoriba Cookies are sure to become a favorite to offer alongside tea or coffee. They have a delightfully coarse crumb and appealing color due to the fine semolina, and are aromatically flavored with orange flower water and either vanilla or lemon zest.

Unlike many other Moroccan cookies, I find that Semolina Ghoribas will not stay fresh beyond a few days at room temperature, so you may want to freeze part of the batch to be enjoyed later.
