This creamy, satisfying Potato Soup with Za'atar and Cumin is easy to throw together with ingredients on hand in most Moroccan kitchens. I find it filling enough to offer as main supper fare, but go ahead and serve it as a starter if you prefer.
Although fresh herbs will lend the best flavor, you can also season the soup with dried herbs. As always, thyme or oregano can be substituted for the Moroccan za'atar.
