Years ago, my husband's aunt supplied me with her terrific recipe for Fekkas with Almonds, Raisins and Sesame. Anise seeds and orange flower water add traditional flavor, making these cookies great for snacking, tea time or serving as part of a holiday cookie spread
Moroccan fekkas very much resemble their Italian counterpart, biscotti, and like them they're twice-baked. Fekkas tend to be smaller in size than biscotti, however, and although quite crunchy, they're never hard to bite through.
