This zesty tomato-sauce based dish is not for the squeamish. Mokh means brains, and that's precisely what's shown in the photo. Although there are number of ways to prepare this offal, Mokh in Tomato Sauce is a fairly popular way to do so, particularly in the days following Eid Al-Adha. In my home, it was served on the second day of the holiday as a side to Leg of Lamb Brochettes. The requisite pot of Moroccan tea was, of course, on the table as well.
