The bunch of greens shown here is common mallow, known as khoubiza or bakoula in Morocco. In season now, they're readily available in souks, where buyers likely will designate them for use in a delicious Cooked Mallow Salad, also known as Khoubiza. It's prepared by steaming the chopped mallow leaves and then sauteing them with olive oil, garlic, lemon juice and generous quantities of herbs and spices. Served as a dip with Moroccan bread, it's one of my families favorite Moroccan side dishes. When mallow is not in season, we make a similar salad using spinach. My kids slightly prefer the spinach version over the mallow, but I find both salads equally enjoyable.
