Lamb or Beef Tagine with Artichoke Bottoms

By January 2, 2013

Follow me on:

It's that time of year when fresh artichokes are available everywhere - in souks, in grocery stores, and in residential neighborhoods via donkey-pulled or hand-pushed carts. One of the most popular ways to enjoy them is to add the fleshy, concave bottoms to tagines. This Lamb or Beef with Artichokes Recipe keeps things simple, but you might also want to pair the artichokes with freshly-shelled peas or fava beans. If you've never worked with fresh artichokes, How to Clean Artichokes shows how to pare them down to the desired bottom.
