Licorice is appreciated in Morocco for its naturally sweet flavor and therapeutic benefits. Here the root is simply infused in hot water to make a tea well-suited for treating colds, coughs, hoarse voices and sore throats. It may, of course, also be enjoyed for its good taste.
Note that a piece of licorice root approximately the size of an adult finger will yield the 10 grams called for in the recipe.

- 2 cups (1/2 liter) water
- 15 g of licorice root, finely chopped or ground
Bring the water to a boil in a small pot. Add the licorice and simmer for ten minutes. Remove from the heat, strain the liquid into cups and serve.
