Day Old Bread Recipes - Ideas for Using Stale Bread

Moroccan bread is a staple of the Moroccan diet and is usually served fresh for each meal. Delicious as it is, it does tend to dry out quickly. So what can can you do with day old or stale bread? Here are some ideas, or share your own tips for using stale bread in What Do You Do with Old Bread?

1. Chicken Rfisa - Moroccan Chicken with Lentils

This Moroccan chicken and lentil dish can be served on a bed of shredded msemen, meloui or day old bread. The blend of Ras El Hanout spices, fenugreek seeds (helba in Arabic), saffron and other seasonings makes a truly unique and delicious dish.

2. Homemade Seasoned Bread Crumbs

Bread crumbs can be purchased from some bakeries in Morocco, but they're surprisingly expensive. Save your day old bread and make your own seasoned bread crumbs. I make large batches of this recipe and use it to bread and fry calamari, cauliflower, zucchini, turkey breast and more.

3. Moroccan French Toast

Slice day old Moroccan bread or French bread into elongated fingers to make this a finger food for breakfast or tea time. I often slice stale bread this way and freeze it until enough accumulates to make French toast for the family.

4. British Bread and Butter Pudding

This sweet homey dessert is a perfect way to use up some old bread. Although many bread pudding recipes use cubed bread, this one calls for layering sliced bread in the bottom of a baking dish. Moroccan bread can be cut into narrow slices by simply cutting straight across the round loaf.

5. Savory Mushroom Bread Pudding

This savory Eastern European recipe is a great accompaniment to beef or game dishes and it can be made with rye or white breads. Some of the ingredients such as dried porcini mushrooms and Parmigiano Reggiano cheese are specialty items in Morocco, but they can often be found in larger grocery stores.

6. Italian Uses for Stale Bread

Bread is also a staple of the Italian diet, and as this impressive list shows, there's plenty of appetizing dishes which can be built around leftover bread. Soups, salads, stews and more – give some of them a try!

7. Shrimp Toast

Chinese Shrimp Toast is a popular dim sum appetizer. A shrimp mixture is spread on small portions of toast and then deep-fried. This recipe works well with both sliced and crusty breads.
