Finot - Durum Flour



Hard durum wheat flour, usually sold under its French name of finot or farine finot de blé dur, is one of many flours which are available in Morocco. I like to use the yellow-hued durum flour in combination with white flour and a little wheat flour to make khobz or pita-like batbout.

Durum flour should not be confused with semolina, a more-coarsely ground flour from the same grain. Despite that, durum flour and fine semolina may sometimes be substituted for each other in Moroccan bread recipes.
