Harissa is a fiery condiment made from grinding dried red chili peppers and garlic to a paste with lemon juice and olive oil. Cumin, caraway and coriander are typical seasonings. Some versions of harissa – such as that available from Mustapha's Moroccan – include roasted red bell pepper in the paste. Others might include tomato.
