Za'atar is the Moroccan Arabic word for wild Mediterranean oregano (Origanum vulgare or Origanum compactum), but the word might also refer to wild thyme (Thymus vulgaris or Thymus divers). It should be noted that thyme might more commonly be called azz'itra. Both herbs have culinary and medicinal purposes.
In Moroccan cuisine, it's important not to confuse this herb with a Middle Eastern spice blend which also goes by the same name.
