Moroccan Recipes with Orange Flower Water

Orange Blossom Water as an Ingredient in Moroccan Cooking

Orange flower water is made using orange tree blossoms and a steam distillation process. The resulting fragrant water has found its way into many culinary uses in Moroccan cuisine. These recipes on the Moroccan Food site all include orange flower water in their list of ingredients.

1. Almond Briouats

These popular Moroccan cookies are made by folding almond paste flavored with orange flower water and cinnamon within warqa dough. The pastries are fried and then soaked briefly in honey.

2. Moroccan Almond Milkshake

Almond milkshakes are very popular in Morocco, particularly in Ramadan. A tiny bit of orange flower water gives this almond shake its classic taste. I like it best served icy cold.

This delicious, fresh fruit salad is actually more like a homemade fruit cocktail – once sliced or cubed, the fruit is combined with orange juice, sugar and orange flower water and left to macerate while it chills.

Although yogurt-like in consistency, this Moroccan dairy dessert is actually a junket which may be flavored with orange flower water. The recipe explains Raib Beldi's traditional preparation from fresh raw cow's milk and plant enzymes released from the dried chokes of wild artichokes.

Orange flower water and cinnamon are used to flavor the almond paste filling in this traditional stuffed date recipe. Serve them during Ramadan or as part of a special occasion spread of sweets.

6. Makrout with Dates and Honey

This special occasion cookie is popular throughout North Africa. This version features a date paste filling enclosed in semolina dough. The cookies are fried then dipped in honey.

Ktefa is a traditional Moroccan dessert made by layering crispy warqa pastry with sweetened fried almonds and custard sauce (creme anglaise) scented with orange flower water.

Chicken Bastilla is Morocco's famous chicken pie. A light, crispy pastry shell conceals savory saffron chicken, spicy omelet stuffing, and crunchy topping of fried almonds sweetened and flavored with orange flower water.

9. Krachel - Sweet Rolls with Anise, Sesame and Orange Flower Water

Anise seeds, sesame seeds and orange flower water give these sweet rolls their fragrant, characteristic flavor. Serve krachel plain or with butter, jam, cream cheese, or even peanut butter and jelly.
