Eid Al-Adha is the most significant Islamic holiday of the year. On this important day, Muslim families throughout Morocco – and all over the the world – will humanely slaughter a sheep, goat, cow or camel. Much of the meat is given away in charity, and efforts are made so that not a single part of the animal goes to waste.

Because the majority of Americans purchase meat neatly packaged in supermarkets, they may never have been exposed to a home slaughter according to the Islamic zabihah method. They also might not have seen or sampled offal and variety meats. I've tried to avoid very graphic images, nonetheless some of the photos in this gallery may be disturbing to some readers.
