Moroccan Feggous Salad with Orange Flower Water

Feggous is the Moroccan name for the Armenian cucumber, also known as snake cucumber, snake melon, yard-long cucumber, fakkous and uri. These long, thin cucumbers are mild, crispy, and don't need to be peeled or seeded – perfect for using in this refreshing Moroccan salad with orange flower water. The salad is especially good chilled.

In addition to this salad, Moroccans eat feggous plain, sliced, salted, sweetened, or add them to chopped salads. Feggous is available in Morocco during summer months.

Serves 4 as a starter, side or follow-up to a main dish.

Prep Time: 10 minutes
Ingredients:
  • 1 lb. (about 1/2 kg) feggous (Armenian cucumber)
  • 2 1/2 tablespoons sugar
  • 2 1/2 tablespoons lemon juice
  • 1 tablespoon orange flower water
  • pinch of salt
Preparation:

Cut the ends off the feggous, and grate them into fine strands. Mix in the sugar, lemon juice, orange flower water and salt.

Leave the salad to stand at least 10 minutes to macerate, or cover and chill.

The salad should be served in individual bowls with the juices.
