Set the rolled dough upright on its end, and leave to rest for 20 minutes or longer. As the dough rests, the coil might want to topple over. If this happens, flatten the tops of the coils slightly to help them stand upright and retain a nice shape.
Fold and roll the rest of the dough. Keep track of which rolls were made first as they will have rested longest and be easiest to flatten when it's time to cook them.
