Cook the meloui in the order in which you folded them.
Heat a frying pan or griddle over medium heat. Flatten a folded coil of meloui on an oiled surface, and transfer it to the hot pan. Cook for several minutes, turning several times, until golden brown. Transfer the cooked meloui to a rack.
Meloui are best served served hot from the griddle or warm. They can be eaten plain, spread with jam or dipped in syrup made by heating equal portions of butter and honey.
