Roast the Peanuts and Make the Dough

Start by roasting 3 cups (500 g) of raw shelled peanuts in a 350° F (180° C) oven for 15 to 20 minutes, or until the peanuts are golden brown. Watch the peanuts carefully towards the end of roasting, as the color can turn too dark quickly. Remove the peanuts from the oven and leave to cool on the tray.

While the peanuts are in the oven you can make the dough. Combine the following ingredients in a large bowl, mixing and knead until smooth:

  • 2 cups (275 g) flour
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 3/4 cup milk mixed with 1 teaspoon vinegar (let sit for 5 minutes to thicken)

The dough will be fairly stiff, but it will be easy to work with after it rests. Wrap the dough in plastic and chill it in the fridge for at least an hour.
