Enclose the Chocolate in the Rolled Out Dough

Take a portion of the dough and roll it out into a rectangle about 1/4" (6 mm) thick. Trim the edges to make them neat, and then cut the dough into four smaller rectangles.

Place some chocolate in the center of a rectangle, and fold the dough into thirds to enclose the chocolate. I've used several thin sticks of baking chocolate, but any good quality dark or semisweet chocolate can be cut up and used instead.
