Make the Kefta Meatballs
How to Make Moroccan Meatball Tagine - Kefta Mkaouara, Kefta Mkawra

Season the Meat and Shape Small Meatballs

Combine the following to make the kefta:

  • 1 lb. (about 1/2 kg) ground beef or lamb (or a combination of the two)
  • 1 medium onion, chopped very fine
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon pepper
  • 1/4 teaspoon hot paprika (or 1/8 teaspoon ground hot pepper)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh coriander (cilantro)

Use your hands to knead everything together, and then shape the kefta into very small meatballs. I make mine about the size of large cherries – about 3/4 inch in diameter.
