A freshly blended strawberry smoothie is a delightful treat in the afternoon, and it makes a great evening pick-me-up. Easy and delicious, this strawberry smoothie recipe skips the yogurt that is so common in smoothies. It is, instead, a Moroccan-style smoothie that features sweetened condensed milk (lait concentré sucré), fresh strawberries, and a hint of lemon juice.

Cold beverages are key in Morocco, as they help to beat the heat in the North African nation. Milkshakes and fresh fruit smoothies are among the most popular chilled drinks. While enjoyed regularly, they're also commonly served in shot glasses as a party beverage or in Ramadan at iftar when breaking the fast.

An average can of sweetened condensed milk is the 14 ounces required for this recipe. It gives the smoothie a delicious creaminess. If you are worried about the beverage being too sweet for your liking, you can use unsweetened evaporated milk (lait concentré non-sucré) instead and sweeten it to taste with sugar or honey.

Fresh strawberries are ideal for achieving the best flavor. Adding an entire tray of ice cubes to the blender will soften the flavor, add volume, and ensure that the smoothie remains ice-cold and refreshing from the first sip to the last. You can also add the ice gradually and blend it in to get your desired consistency and flavor. Frozen strawberries are a great substitute when the fresh fruit isn't available, but you will likely want to use less ice or eliminate it entirely.

You will need to squeeze the juice from one whole lemon to obtain the required amount for this smoothie. Don't add all of it at once because lemon sizes vary, and the fruit can yield between two and three tablespoons. The best approach is to add the fresh juice to the blender one tablespoon at a time, tasting the smoothie after each addition to determine if it needs another splash.

Ingredients

  • 700 grams (1 1/2 pounds) fresh strawberries

  • 397 grams (14 ounces) sweetened condensed milk

  • 236 to 475 milliliters (1 to 2 cups) cold water

  • 2 tablespoons freshly squeezed lemon juice, or to taste

  • Ice cubes, optional

Steps to Make It

  1. Gather the ingredients.

  2. Hull and wash the strawberries. Drain. If time allows, chill until ready to make the smoothie.

  3. In a blender, process the strawberries and condensed milk until the berries are completely pureed and the mixture is smooth and creamy. Blend in 1 to 2 cups of cold water to adjust the beverage to desired thickness and sweetness.

  4. Add the lemon juice and ice (if using) and process until the ice is crushed and well blended into the smoothie.

  5. Pour into glasses and serve.
